About me

For anyone who knows me, the name Mai is inextricably linked to Food! So my first memories of food is when I was 6 or 7 with the dish 'gà rô ti', roasted chicken with Chinese five-spice powder. I could describe it so well to my mother that she thought 'how do you remember all that'.

My name is Mai Nguyễn and I am the author of the Vietnamese cookbooks Ăn Ăn (2020) and the Bible of Vietnamese Cuisine (2025).

After living in several countries with my family, I have been living in Leiden since 2015, where I have my own cooking studio and organize cooking workshops and chef's tables. I also participated in MasterChef Holland 2016 and have been in the kitchen with chefs such as Ottolenghi, Meerah Sodha, Edwin Vinke, Joris Bijdendijk, Robert Kranenborg and Eric van Loo.

UNIque taste

Besides iconic dishes such as Pho Bo (noodle soup with beef), Bun Cha (pork burgers with noodles) and Cha Gio (fried spring rolls), we offer, for example, lukewarm fig salad with shrimp from Central Vietnam, steamed rice cakes from different regions, various vegetarian dishes, seafood and fish dishes.
